Ingredients
(Serves 4)
225g (8oz) Celtic Promise
30g (1oz) butter
1 tsp english mustard
1 egg, beaten
salt and pepper
4 slices of farmhouse bread, lightly toasted
a few drops Tabasco or Worcestershire sauce
How to make it
Hot cheese sauce served over slices of toasted bread, what’s not to like with Welsh Rarebit? Celtic Promise offers a rich full flavour to boot. Celtic Promise is a mystical name and it must, we think, have been crafted by fairies and elves in the forests of West Wales because this is a truly magical cheese!
- Heat the oven to 220C (200 in a fan oven).
- Toast the bread
- Grate the Celtic Promise
- Add to a mix of the English mustard, egg and tabasco
- Season with salt and pepper
- Butter the bread
- Spread onto buttered toast
- Pop in the oven for 5 – 10 mins until browned and gorgeous
Welsh Rarebit is great for lunch, or you could use small chunks of bread and serve as canapes!
