All About Matcha Ice Cream

I haven’t had ice cream in forever, and it’s mostly because I stopped eating sweets. Not only do I prefer salty foods in general, I still deal with candida symptoms, especially when I’m under a lot of stress.

However, this paleo matcha ice cream? It contains only clean, good-for-you ingredients that don’t give me any of the blood sugar symptoms or digestive issues. It’s just the best!

I first had matcha ice cream when I was visiting Seoul, Korea, in the summer back in middle school. The thought of green tea ice cream seemed a bit strange to me, but once I tasted it, I was obsessed. The slightly bitter and smooth taste of matcha complemented so well with the sweet creaminess added to it.

It’s still one of my favorite flavors today, as seen in these matcha recipes: Matcha Tiramisu, Matcha Pudding, and Hot Chocolate Matcha Latte.

What Makes This Recipe Great

Sometimes, I just want a simple, easy treat to fulfill my sweet tooth. Since I usually have frozen bananas on hand, this dairy-free green tea ice cream has been my go-to dessert on hot days. It’s such an easy recipe to make and has all the earthy flavor matcha lovers enjoy.

It’s creamy, healthy, and delicious, and it brings me right back to my childhood when I used to enjoy matcha ice cream regularly when I visited my family in South Korea!

I love the fact that this green tea ice cream literally takes 3 simple ingredients to make, and you don’t even need an ice cream maker! There’s no heavy cream, cane sugar, or egg yolks, it’s just bananas, coconut cream, and matcha powder!

Also, it tastes AMAZING. You can definitely taste a bit of banana in it, but it’s not overpowering. The matcha flavor really shines through, and the result is just so wonderful! Homemade ice cream for the win!

  • Bananas
  • Coconut Milk or Coconut Cream: Use a can of unsweetened coconut milk or coconut cream. This makes an excellent ice cream base because it’s thick and creamy, like heavy whipping cream, but totally dairy-free! You can also swap this for another milk of choice if desired.

  • Toppings: You can also add toppings to this ice cream, like chocolate chips, whipped cream, sprinkles, nuts, and more. I personally like it plain or with some chocolate chips!

  1. Peel the bananas, slice them into 3-inch chunks, place them on a parchment paper lined plate, and freeze for at least 3 hours.
  2. Once frozen, place the bananas in a blender or food processor, and add coconut milk and matcha powder. Blend until smooth and creamy.
  3. Taste, and if desired, add vanilla extract and/or sweetener. Blend again.
  4. Serve immediately for a soft serve texture, or store in the freezer for 2-3 hours if you want it firmer like ice cream.
  5. Sprinkle with your favorite toppings, if using. Enjoy!
